In the Kitchen: Crisp Chocolate Chip, Dried Cherry and Pistachio Cookies

Yes, these cookies do sound a little odd, fancy and all yuppie-ish, but they are tasty. I was quite a bit skeptical myself, mostly because I am not not all that into adding dried fruits and nuts to my cookies.

These cookies are delightfully crisp around the edges and soft on the inside. The combo of chocolate, pistachios and dried cherries, was unique but oddly satisfying and complementary. I got this recipe from Luscious Chocolate Desserts by Lori Longbotham (so close to being Neville's relative). I got the book at my wedding shower from my very good friends, Caitlin and Mallory. I am so glad you two got me this cookbook---it has some delicious recipes.

Ingredients:
1 1/2 cups flour
3/4 tsp. salt
3/4 tsp. baking soda
3/4 cup (1 1/2 sticks) unsalted butter
1/2 cup brown sugar
1/4 cup granulated sugar
3 tbsp. light corn syrup
2 tbsp. milk
2 tsp. vanilla
1 cup chocolate chips (preferably mini ones, and also quality ones as well)
3/4 cup unsalted, toasted, shelled pistachios, chopped
3/4 cup dried cherries, chopped


Preheat the oven to 375 degrees F. Lightly butter your baking sheet(s).

Whisk the flour, salt and baking soda together in a small bowl.

Beat the butter with an electric mixer on medium high speed until light and fluffy. Add in the sugars and beat until light and fluffy. Beat in the corn syrup until well blended. Beat in the milk and vanilla.

With the mixer on low speed, beat in the flour until combined.  With a rubber spatula, mix in the chocolate chips, pistachios and cherries. 


Shape the dough into balls and flatten the tops with your hand or a cup. Bake for 8-10 minutes. The cookies will be quite soft---make sure not to over cook! Take them out and let them sit on the pan for about 10 minutes before removing to a wire rack to cool.

  1. Oh, that's me! Maybe now I shall have to attempt these. Did I tell you that I did end up making your wedding cake, for a friend's birthday a couple of weeks ago? It was delightful.
